I will try to keep this post short, since I know that everyone is super busy during the Holidays season.
I just wanted to wish you all happy, healthy, and safe Holidays. And I will leave you with a super easy and fun recipe for my peppermint bark.
24 oz. dark chocolate, coarsely chopped
10 oz. peppermint hard candies or 6-8 large candy canes
6 oz. dried cranberries
Place candy in a freezer bag and tap with a hammer until crushed. I did that outside on my patio, because I was afraid I would chip the tile on my kitchen counter.
Line a cookie sheet with aluminum foil. Place chocolate pieces in a metal mixing bowl and set the bowl over a pot of barely simmering water. Be careful not to get water in the chocolate. When chocolate is nearly melted, remove from heat and stir until it becomes smooth.
Pour chocolate onto the foil-lined pan and spread with a spatula to make a layer about 1/8 inch thick. Drop peppermint candy pieces and dried cranberries into the chocolate and gently press with the spatula. If you prefer, you can mix it into the melted chocolate prior to pouring it onto the pan. I like option one, since you can see both peppermint pieces and dried cranberry pieces on top of the chocolate and not coated with it. But it is a personal preference.
I like to use PoundPlus Belgian dark chocolate from Trader Joe’s but any chocolate bar should do. And if you like milk chocolate better than the dark one, it’s great as well. I honestly don’t care for dark chocolate (gasp!) and only eat milk chocolate, but for this recipe dark chocolate works great.
I chose Orange Flavored Cranberries from Trader Joe’s as well, but the regular dried cranberries are more than fine for this recipe. My one pet peeve is to use peppermint candy that DOES NOT contain any artificial colors. So I buy them from… yes, you guessed it – from Trader Joe’s. Whole Foods Market and PCC also usually carry the naturally-colored peppermint candy or candy canes as well.
